Grilled Island Style Pork Ribs

This marinade is delicious and could be used on practically any type of meat.  I've tried it on both pork and chicken with equally tasty results.

Ingredients:
2-3 lbs country style pork ribs (or substitute for other ribs, chicken drumsticks, etc)
1/3 cup dark rum
1/3 cup pineapple juice
1/3 cup brown sugar
3 tbsp lime juice
2 tbsp Thai garlic chili sauce
2 cloves garlic, minced
1 tsp onion powder
1 tsp salt

Directions:
Mix rum, lime and pineapple juice, and spices in a large bowl.  Reserve 1/2 cup of the sauce.  Place the ribs in the marinade.  Cover and refrigerate for at least an hour, up to overnight.

Remove ribs from marinade and lay on paper towels to drain.  Bring meat to room temperature. Heat grill to medium/medium high.  Place the ribs on the grill and cook for 10-12 minutes on first side, then turn and cook 6-8 minutes on the other.

These ribs could also be cooked at a lower temperature for a longer time, but for country style ribs, which are quite meaty, I find it is not necessary to cook them that long - they are plenty tender even after grilling at high heat.  Enjoy!
