Grilled Guacamole

This is a basic guacamole with one difference - the avocados are grilled, which gives the guacamole a deeper, smoky flavor.

Ingredients:

6 avocados, halved and pitted
2 medium roma tomatoes
1/2 cup diced red onion
1/2 cup cilantro, chopped
1/4 cup lime juice
1 tbsp olive oil
1 jalapeno pepper, seeded and minced
4 cloves garlic, minced
salt and pepper, to taste

Directions:

Preheat an outdoor grill for medium heat.  Split avocados in half, remove pits, and then peel away skin.  Drizzle with the olive oil and sprinkle with salt and pepper.  Cook the avocados on the preheated grill until just slightly browned and caramelized. Allow to cool to room temperature.
Place avocados into a mixing bowl, and mash together with the onion, jalapeno pepper, lime juice, garlic, and cilantro.  Stir in the tomatoes and season to taste. Chill at least 30 minutes, then serve with tortilla chips.
