Strawberry Strudel

I had never even heard of a strawberry strudel before I was challenged to a Stru-Duel.  I learned that strawberry is a tough competitor.


Ingredients:
4 sheets phyllo dough; thawed 
1 tablespoon sugar 
1 tablespoon melted butter
2 cups fresh strawberries; sliced 
1/4 cup sugar 
3 tablespoons cornstarch
Powdered sugar, for sprinkling

Directions:
Preheat oven to 375 degrees.  Line a baking sheet with foil and spray lightly with cooking spray. Combine strawberries, sugar and cornstarch in a bowl and toss to coat.  Set aside.

Lay one sheet of phyllo on baking sheet.  Brush with melted butter.  Sprinkle lightly with sugar.  Lay second sheet of phyllo on top of first and brush with butter.  Pile half of strawberry mixture on top of phyllo dough and then add another sheet on top.  Repeat with remaining phyllo and strawberries, laying the final sheet on top of that and brushing again with the butter.

Bake for 20-25 minutes or until golden brown.  Sprinkle with powdered sugar, then cut and serve warm.
