This is one of my favorite appetizer recipes, because it's fast, delicious, and you can make changes to it easily. After you have made it once, you probably won't need the recipe anymore, I always just make it to taste.
Recipe:
2 (6.5 ounce) jars artichoke hearts, drained and chopped
1 10 oz package frozen spinach, drained and chopped
1 cup mixed Italian cheese
1 cup mozzarella cheese
3 finely chopped garlic cloves
1 8 oz pkg cream cheese
Salt & pepper to taste
1 French baguette, cut into 1/3 inch thick slices
Directions:
Cook in the oven at 350 for about 20 minutes, or until melted and slightly brown on top.
Tips:
You can really add as much cheese as you want here - I usually just mix it around until I get a nice consistency with the cream cheese and vegetables. The same goes with the garlic - I like it really garlicky but if you aren't into that yourself, you could always cut back or leave it out completely.
This is delicious served with crostini. Also, if you have a Costco membership, you can get a giant jar of artichoke hearts for about $8 (jars at the regular store cost about $4 each). I usually buy a jar and use it to make this recipe about 10 times before I run out. Because the artichoke hearts are stored in oil, they don't go bad quickly, so you can buy that one jar and have it last for an entire year - if you have the fridge space!
